Coffee is grown across the world and comes in many different roasts, flavors, and varieties. While many factors influence the final cup, the development of a coffee's flavor begins long before the beans reach the grinder.
The majority of coffee is grown and produced along the ‘Coffee Belt,’ a band of coffee producing countries located on or near the equator. Within this band, differences in soil composition, altitudes, climates, and agricultural practices influence the unique flavor profiles in each region. These environmental factors, or terroir, impact how coffee plants grow and develop. Understanding how terroir affects coffee allows you to better appreciate the flavors in your cup and discover the global origins that best suit your preferences.

Costa Rica
Costa Rica is located within the Central and South American growing region, known for producing coffees with smooth, balanced flavors. Many Costa Rican coffees feature bright acidity, sweetness, and a clean reflection of the country’s terroir.
Volcanic Soil
Most of the growing regions in Costa Rica are found along the slopes of active and extinct volcanoes. These areas exhibit mineral-rich volcanic soils that provide essential nutrients such as potassium, magnesium, and phosphorus to its crops. This soil promotes healthy plant growth while providing excellent water drainage. With the combination of nutrient abundance and drainage, the coffee plants have a healthy metabolism resulting in a bright and vibrant acidity.
Importance of Altitude
Growing elevation also plays a key role in coffee quality throughout this region. Many farms grow coffee at altitudes above 1,200 meters (~3,900 feet). These higher levels come with cooler temperatures and thinner air, slowing the ripening speed of the coffee cherry. With a longer growing period, the coffee bean develops further sugars and complex flavor compounds. The resulting beans are denser and contain more nuanced flavors, such as floral notes and a cleaner finish. The Tarrazú region, one of the highest elevated growing regions in Costa Rica, is well known for producing these sought-after coffee beans due to these conditions.
Climate and Seasonal Influence
Costa Rica’s mountainous terrain creates a variety of microclimates throughout the country. Variations in sun exposure, slopes, and rainfall patterns significantly impact coffee production and the flavors it produces, even between farms a few kilometers apart. Additionally, Costa Rica’s well-defined dry season between December and April closely aligns with typical coffee harvest and drying periods. This consistency, coupled with the microclimates promoting growth, improves the processing quality and production of the coffee.
Shade-Grown Coffee
Many Costa Rican coffee farms also incorporate shade trees into their agricultural practices. This further slows the coffee cherry mutation, adding more depth and flavor complexity. This also contributes to an overall less acidic taste, allowing the plants to have temperature regulation and controlled sun exposure. Altogether, the terroir of Costa Rica creates coffees that are distinctive while reflecting the characteristics that shape the Central and South American region of the Coffee Belt.
Beyond Geography: A Commitment to Quality
While terroir plays a key role in shaping the coffee flavor, Costa Rica has also developed agricultural practices that make it unique from other countries throughout the Coffee Belt.
Arabica Coffee
In 1989, Costa Rica passed a law that required all locally grown coffee to be 100% Coffea arabica. This outlawed the growth of Robusta coffee, a variety known for a higher yield but lower in quality with a bitter profile. As the only coffee-producing country globally that has enacted this legislation, Costa Rica created a reputation for focusing on coffee quality over production volumes.
The Honey (Miel) Process
Alongside its coffee production, Costa Rica is widely recognized as being the ‘home of the honey process,’ a coffee processing method that combines traditional washed and natural processes. During the honey process, the outer skin of the coffee cherry is removed, leaving traces of the sticky fruit pulp, known as mucilage, on the bean for sun-drying. The name of the process comes from the texture of the sugar-rich mucilage, not actual honey. This layer of fruit pulp contributes to the additional sweetness and complexity of the final flavor profile.
Micro-Mills
Another innovation pioneered in Costa Rica was the micro-mill. These small-scale processing operations, often family or community run, allow coffee producers to process their own harvests rather than sending the coffee cherries to centralized plants. Having full control over fermentation, drying, and sorting allows for the maintenance of high-quality production while showcasing the distinct flavors of different farms.
